Easy, Tasty Egg Salad Sans Mayonnaise

So far I haven't heard any complaints, so I'm blogging it.  It's one of the sandwich fillings I make for my husband to make sure he's not hungry during the day.  That's the key to losing weight.  Yes, eat.  Eat good, healthy, non-fattening food.  Actually some of the food I recommend may be considered "fattening" by others.  Remember, you need the fats to be healthy and the healthiest part of the egg is the yolk.

It's best to eat both parts of the egg together.  Don't fear the egg; it's much maligned out of ignorance.

Back to my egg salad, perfect for filling a sandwich:

  • Mash hardboiled eggs with a fork or whatever you usually use. 
  • Add to it some catsup and a bit of oil
  • diced onions are optional, as are any other herbs or spices you want.
Yes, that's it!  It can't be simpler, can it?

    I hate mayo, and that sounds like a good solution. I'm going to try it next time.

    My current version is to caramelize onions in a tiny bit of oil and then mash those in with the eggs. Add some freshly ground black pepper and I have a winner!

    interesting recipe, but I have to comment on the article you linked about eggs being "maligned" out of "ignorance". I asked my doctor about this a few months ago, after reading an article that said that eggs can be eaten in any quantity and that their cholesterol is "harmless". my doctor said: the recommendations haven't changed, it is not recommended to have more than 3 egg yolks a week, particularly if the person has a cholesterol problem. as my doctor described it: "if you don't limit cholesterol and fat, especially saturated fat, it will be clogging your arteries and you will be risking a heart attack down the road." (egg whites are ok, so it is possible to make a larger omelette by combining a whole egg with 2 additional egg whites. I also add lots of sauteed veggies, which add flavor and vitamins as well as bulk.)

    regarding the other nutrients mentioned in the article - I am sure that it is possible to get them from other sources instead of egg yolks.

    as for the claim in the linked article that egg yolks can be eaten raw - that is also not correct. the problem with raw eggs (and also raw chicken) is that the chickens carry salmonella, and the germs are found on the surface of the egg. rinsing the egg doesn't help as the shells are porous and the germs will go right inside! so for safety it is important to cook eggs before eating.

    and while on this topic - of course most people don't eat raw chicken, but it is also important to remember: wash thoroughly, with detergent, any surface or utensil that touches raw chicken. and if a utensil (such as a knife, bowl, or cutting board) touches raw chicken (or raw meat of any kind), make sure to wash it thoroughly with detergent before allowing it to touch anything that will be eaten raw (such as salad or bread).

    Leah, I don't eat raw eggs. Recent research has rescued eggs from "cherem." Not all doctors are aware or can accept such radical change. It's the most perfect protein and when cooked easy to digest.

    I didn't say eggs are "bad" (and neither did my doctor). just that the cholesterol in them isn't "harmless" in unlimited quantitities, and most of the nutrients are available from other sources. my doctor didn't say "no eggs" but he didn't say "unlimited eggs" either.

    incidentally, here is an article on webmd.com (a very reliable website) which says that the current recommendation is that one egg a day is now permitted. but not unlimited. http://www.webmd.com/cholesterol-management/news/20110207/less-cholesterol-in-eggs-usda-says

    I think the part I disagreed with in your description is the claim that eggs are "maligned due to ignorance". it's not "ignorance", and just because one website claims that eggs should be eaten in unlimited quantities, doesn't mean that website is correct.

    Homous is a good substitute for mayonnaise in many salads and I agree with "anonymous": mustard is good too.

    @Hadassa - that's a good idea with hummus, probably tehina will work too. in fact I've used them as a sandwich spread instead of mayo, but never tried inside the salad - worth trying.
