Super Easy One Step "Eggplant Parmigiana"

 

OK I must admit that I'm a lazy cook. I prefer one-pot, one-step recipes. I once watched someone make "real Eggplant Parmigiana," and I was shocked. First she soaked the slices of eggplant, then she coated them in beaten egg, and then bread crumbs and then fried them. Only after that complicated ritual did she do anything like my recipe.

So if you're anything like me you're not interested in the long complicated procedure. Nobody who has eaten my "Eggplant Parmigiana" has spit it out claiming it's "fake." So, here's the recipe.

Ingredients:

  • sliced onion
  • sliced eggplant (thin)
  • sliced tomato
  • sliced pepper optional
  • cheese that melts well either slices or grated
  • garlic, oil, any spices you think will be good

Instructions:

  1. layer onion, then, eggplant, tomato then cheese, then onion, eggplant, pepper, tomato and top with cheese.
  2. add spices and some oil
  3. bake in medium oven 160 centigrade until bubbly
Yes, that's it. You can add some squash or zucchini if you want.

Easy Recipes and Enjoying The New Kitchen


Yesterday we had guests for a Succot lunch. They had been great fans of my new kitchen during the years I just talked and complained. I got a lot of support from them, so it was very exciting to host them. I served a fish meal, mujadarra, eggplant, baked vegetables, salad and salmon.

Mujadarrah:
1 cup brown rice
1 cup lentils
small/medium onion cut
a bit of cooking oil of your choice
4 1/2 cups boiling water

Put all but water in pot, saute a bit, then add boiling water, cover, bring to boil, lower to a simmer until you can't see any water. Leave covered at least another 10 minutes. Serve.

"Impressive" Eggplant:
eggplant
tomatoes
onion
fresh garlic
vegetable oil

Slice eggplant partially, so it opens like a book.
Fill with sliced tomato. Sprinkle diced onion and garlic, then oil. Bake in medium-high (or whatever is recommended by your oven manufacturer) oven until cooked.

"Fancy" Salmon:
Filet of salmon
lemon slices
fresh garlic
mustard
Decorate your salmon. Wrap in foil, if you're baking it at the same time as the other dishes, so it won't overcook. Otherwise just bake in a medium-high (or whatever is recommended by your oven manufacturer) oven until it seems ready. You can check that the salmon has changed color and is flaky where thickest. Yes, it's that simple.

I enjoyed the meal and hope everyone else did, too.

PS It was so much fun being able to cook so quickly. I could fit all three baked dishes in the oven at the same time. I love my new kitchen!!

Eggplant Accordion


I served this all baked, of course, Friday night, and my guests were very impressed. It really is easy to make. As you can see I sliced an eggplant (on aluminum foil) not quite through. And then between the slices I placed thin slices of tomato, onion and garlic. Then I dribbled a bit of oil, and after that I wrapped it up well in foil and baked until soft.

Honestly, that was it. It was that simple.

Keep Trying Something New When Cooking

As you must know by now, unless you're new to this blog, I cook and eat a lot of vegetables.  My cooking has and still evolves, changes.  Here's a new version of my baked vegetables.


From bottom up, you have sweet potatoes, pumpkin, eggplant with garlic in the slices, an onion and in the middle there's a beet.  I was surprised to discover, from my daughter, that beets don't have to be boiled.  You can bake them.

I dribbled a bit of oil on the vegetables, a bit more generously on the eggplant and then baked them.  I love those bake and serve pans.  They make life/cooking/cleaning much easier. This is a very healthy and easy to make dish.  Enjoy!
