Super Simple Fancy Vegetables!

The trick's in the presentation. All you need is a nice dish, whether bakable "glass," pottery or whatever. In this case I decided to use a nice round piece of pottery. Actually the friend who had "potted" it was invited, so I though that it would be a nice touch.

I layered a variety of vegetables, around and around:
  • eggplant
  • squash
  • onion
  • peppers
  • garlic

You can also use:

  • fennel
  • sweet potato
  • pumpkin
  • white potato
  • carrots

Then I poured a little olive oil and some freshly ground pepper.

It all went into the oven and baked until "done;" I never time things, nor measure. It was a great success!

shalom muse...i do the same thing but put the vegetables with the chicken i'm roasting...they all cook at the same time and the chicken gives the veggies a great flavour...boy does that look goooooood...chag sameach

Maybe it's due to my 25 years of being a vegetarian, but I like my vegetables just vegetables.
